You bought a new house and now you are hosting Thanksgiving dinner. What sides are you including in your meal? One of my favorites is sweet potato casserole. Here is a recipe you can try.
Sweet Potato Casserole Recipe
Ingredients:
For the Sweet Potatoes:
- 4 cups mashed sweet potatoes (about 4-5 medium-sized sweet potatoes)
- 1/2 cup unsalted butter, melted
- 1/2 cup brown sugar, packed
- 1/3 cup milk
- 2 large eggs, beaten
- 1 teaspoon vanilla extract
For the Topping:
- 1 cup brown sugar, packed
- 1/3 cup all-purpose flour
- 1/3 cup unsalted butter, melted
- 1 cup chopped pecans or walnuts (optional)
- 1/2 teaspoon ground cinnamon
Optional Marshmallow Topping:
- 2 cups mini marshmallows
Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C).
Prepare Sweet Potatoes:
Peel and cut the sweet potatoes into chunks.
Boil or steam the sweet potato chunks until they are fork-tender. Drain and mash them in a large bowl.
Mix Sweet Potato Mixture:
Add melted butter, brown sugar, milk, beaten eggs, and vanilla extract to the mashed sweet potatoes. Mix well until smooth.
Transfer to Casserole Dish:
Grease a baking dish or casserole dish and transfer the sweet potato mixture into it, spreading it evenly.
Prepare Topping:
In a separate bowl, mix together brown sugar, flour, melted butter, chopped nuts (if using), and ground cinnamon until crumbly.
Top the Sweet Potatoes:
Sprinkle the topping mixture evenly over the sweet potato mixture in the casserole dish.
Optional Marshmallow Topping:
If you want a marshmallow topping, sprinkle mini marshmallows over the sweet potato mixture.
Bake:
Bake in the preheated oven for 25-30 minutes or until the topping is golden brown and the sweet potato mixture is set.
Serve:
Allow the sweet potato casserole to cool for a few minutes before serving. If you went with the marshmallows it should look a little like this:
